In food processing plants, the common sites for Listeria are floors, drains, conveyor belts, stainless steel equipment and cold rooms.
Listeria monocytogenes has a persistent ability to form biofilms matrices in the food processing environments. Biofilms are difficult to eradicate with chemical sanitizers, especially in areas with food debris.
BIOFILMS
- PhageGuard Listex reduces Listeria populations in biofilms with 3 – 5 log/cm2.
- Unlike chemical sanitizers, which oxidize on the surface of the biofilms, phages are able to penetrate into the biofilms and kill Listeria from the inside
- PhageGuard can be used directly on the food, food contact surfaces or in the environment as an additional safety intervention against Listeria monocytogenes.
