Patulin, also known as PAT, is a toxic secondary metabolite produced by molds such as Penicillium and Aspergillus. It is commonly present in various moldy fruits, vegetables, and silage feed, with a particularly severe contamination in apples and their processed products. Patulin can cause significant damage to human neural, respiratory, and urinary systems, potentially leading to symptoms such as nerve paralysis, pulmonary edema, and renal failure. Moreover, it may pose risks of affecting fertility, causing birth defects, and being carcinogenic.

According to the World Health Organization (WHO), the maximum acceptable level of Patulin is:

  • 50 µg/L in apple juice
  • 50 µg/kg in solid apples
  • 10 µg/L in kids and baby apple-based foods
