Cashew/Pistachio

Description

Cashew seeds, derived from the tropical evergreen tree Anacardium occidentale of the Anacardiaceae family, are commonly referred to as cashew nuts. However, they are actually seeds that develop within a kidney-shaped hard shell attached to a cashew apple. Considered as major tree nuts, cashews have the potential to induce severe food allergies, including life-threatening reactions. With a protein content of approximately 18%, cashew seeds contain a significant amount of proteins, many of which are heat-stable. Even after undergoing production processes, these proteins can still trigger allergic responses. Consequently, it is vital to diligently monitor food products for any presence of cashew traces and prevent cross-contamination during manufacturing. Pistachios, being nutrient-dense nuts, provide a remarkable combination of protein, fibre, healthy fats, and essential vitamins and minerals. Categorized as a significant tree nut, pistachios have the potential to elicit severe and even life-threatening food allergies. These versatile nuts can be enjoyed in their raw or roasted form, and they are also commonly utilized in ice cream, confections, baked goods, and salads. To ensure strict compliance with rigorous food safety standards, the food industry must employ highly sensitive testing equipment to thoroughly inspect both the production environment and food items for the presence of cashew and pistachio allergens. This proactive approach is essential in safeguarding consumer health and preventing allergic reactions.
